Easy Egg Dishes for Every Meal of the Day

This post may contain affiliate links.  Please see my disclosure for more information.I LOVE EGGS.  They are cheap, versatile, and cook quickly.  Plus, they're nutritious on all kinds of levels.  Super win!  In fact, some even say that the way you like your eggs says something about who you are. While they're traditionally a breakfast food, I like to eat eggs any time of day!  On the nights when my husband works late, I usually make myself some sort of egg dish.  I get a nice single portion, which makes clean up easier too!  Even my 9 month old can get on board with scrambled eggs.  So it's kind of like we're eating dinner together... except mine has Siracha. There are a few dishes that I find myself making week after week, especially on Sunday morning... and Tuesday night :)

Fried Egg on Avocado Toast with Siracha (great anytime, but this is my go-to for a quick dinner!)

Egg in a Hole (My favorite for breakfast!)

Easy Migas (Hubby's favorite for weekend brunch!)

A few more eggscellent recipes and tips (see what I did there?):
  • Good old Martha is my go-to for lessons on egg boiling.  She has pictures AND video, so it's impossible to screw up.
  • I love this Baked Tomato Egg from Fed and Fit.  So easy and pretty!  This would be super impressive for a brunch.
  • The Scotch eggs at Red Lion, one of my go-to restaurants in Houston, are amazing.... if you like eggs wrapped in sausage, breaded, and deep-fried.  And I do.
  • These Bacon Cheddar Deviled Eggs sound amazing for Easter or a summer barbecue.
  • If you're a gadget fan, Sur La Table has an entire section of their website devoted to egg tools.  PS if you haven't shopped their weekly deals page, you're missing out!
  • Quiche is my favorite make-ahead and slice-as-you-need-it breakfast.  and lunch.  I made a sausage and broccoli one last week - recipe coming soon!
  • And finally, this all reminds me of my poor friends who are allergic to eggs.  So here's a pretty sweet guide to egg-free baking if you must abstain!
Hope you enjoy!!
