How to Fix Broken Mayonnaise

Note: This post contains affiliate links, which means that if you purchase using one of the links in this post, I may earn a small commission at no extra cost to you, Thanks for your support!If you're doing Whole30 right now, I'm willing to bet that you're figuring out every way possible to use mayo in your meals.  I used to think I hated mayonnaise, but it turns out I just don't care for mayonnaise from a shelf.  Whole30 taught me that homemade mayonnaise is DELISH.  Seriously.  It's the best.  And it's actually extremely easy to make with only 4 Whole30 approved ingredients!  The only tricky thing about homemade mayo is that it's possible that it will "break" and not set up into thick, creamy goodness.  Luckily, broken mayonnaise is even easier to fix than it is to make the first time!How to fix broken, runny mayonnaise the easy way! #mayonnaise #whole30 #kitchenhack #homemademayo #easymayoLet me show you:First, get a blender (this is my [amazon_textlink asin='B008H4SLV6' text='fave' template='ProductLink' store='us-1' marketplace='US' link_id='0cb9ea4e-443b-11e8-b68a-9b8639a5f4bb']) (or an immersion stick blender and a tall narrow jar), two room-temperature eggs, a lemon, a pinch of mustard powder and 1 cup of grape seed oil.

If your eggs aren't room temperature (because they never are when you need mayo NOW), just soak them in some warm water for 5-10 minutes.

Separate the egg whites and drop the yolks ONLY into the bottom of the blender.  Add the juice of a half a lemon and the mustard powder.  The lemon and mustard add acid and help emulsify things.  I also add a pinch of salt and pepper for flavor.

Give the egg yolk mixture a whir until the liquid is a little lighter in color than it was when you started.

Then, with the blender on low, slowly drizzle the oil into the opening in the lid.  You'll probably want to hold the lid on and block the spray a bit with your hand.  This is messy business, but it's worth it, I promise.

Now, this is what broken mayonnaise looks like.  It didn't emulsify and thicken at all. Basically I have created a dish I like to call "blended oil and egg."  Gross.  But have no fear!  There is a solution!  Pour the blended mixture BACK into the measuring cup you used for the oil.

Crack ONE more egg yolk into the bottom of the blender.  Add a few drops of lemon juice and a bit of that mustard powder.

Then, with the blender on low again, drizzle that blended mixture in as slow as you can stand it.

For some reason, I've never screwed mayonnaise up twice.  It can be temperamental the first time, but the second go around is fool proof!

Well look at you, Suzy Homemaker! Go ahead, feel smug.  Your mayonnaise has four ingredients.  The one in the fridge has nineteen (seriously - I counted!).  AND this stuff is Whole30 approved!

To recap: 2 large egg yolks (plus one on standby), juice of half a lemon, a pinch of dry mustard, salt, and pepper, and one cup of grape seed oil = all the mayonnaise a gal could want for the week!

P.S. This is also exactly how you make delicious, rich hollandaise sauce, but with melted butter in place of the oil!

Now the question is, what to do with that mayonnaise?!  My favorite use is your classic chicken salad.  I usually make this on the weekend for lunch, or I'll bring it to school when I'm tired of my sweet potato, chicken, and veggie mainstay.  Here are a few of my favorite combos!

Plus two tablespoons of mayo...

And sliced cucumbers or plantain chips to act as dippers!

Pretty picture perfect lunch if you ask me!
